I’m especially passionate about Nigerian cuisine because of its bold flavors, rich spices, and cultural depth. I also love experimenting with continental and fusion dishes, blending local ingredients with international techniques to create something unique. Ingredients I enjoy working with include fresh herbs, native spices, seafood, and seasonal vegetables — they allow me to build layers of flavor naturally.
At the core of my cooking philosophy is respect for ingredients, creativity, and consistency. I cook with intention and always aim to leave a lasting impression with every meal I serve.
How Mercy Vincent handles criticisms:

What led Mercy Vincent to become a chef / cook:

What started as a passion gradually became something I wanted to pursue professionally. I've had hands on experience cooking for events, families, and even in fast-paced environments. I enjoy bringing creativity and love into every dish I make, and seeing people enjoy my food gives me so much fulfillment. Being a chef isn’t just a job to me, it’s a calling, and I’m constantly learning and growing in it.
